As Mediterranean Diet Month winds down, the Las Vegas live-in care experts at Home Care Assistance want to share one of their clients’ favorite healthy recipes. This delicious one-pot meal is easy enough to prepare for a quick lunch, but pretty enough for a dinner party. With green spinach and bright red pomegranate seeds, this pasta is as rich in antioxidants as it is in flavor. Antioxidants are essential to senior health because they minimize the effects of harmful free radicals, and spinach and pomegranate seeds are also rich in fiber and folate. However, this recipe uses feta cheese, so be careful not to add any additional sodium. “Orzo” means “rice” in Italian, which is what this pasta resembles: plump grains of rice. This recipe has the best texture with orzo pasta, but any smaller pasta shape will do. Whatever pasta you choose, use whole-wheat for maximum fiber and nutrition.
- 8 oz. whole-wheat orzo
- 2 cups chopped fresh spinach
- Seeds from one pomegranate (or thawed frozen seeds)
- 4 oz. feta cheese, crumbled
- Olive oil
- Pepper (to taste)
Boil the orzo according to the package directions, adding one teaspoon of olive oil to the water before boiling to prevent the pasta from sticking together. Drain off excess water, but keep the pasta in the pot. Let cool 5 minutes, stirring occasionally to prevent sticking. Add chopped spinach and stir until just wilted. Add crumbled feta cheese and stir until it partially melts into a creamy sauce. Add pomegranate seeds and stir. Add pepper to taste. Remember, you won’t need any salt because of the feta cheese. Makes 4 generous servings. This is delicious served warm or chilled as a pasta salad.
